Gochujang Smashed Jersey Royals:

Ingredients:
500g Jersey Royals
1 tbsp gochujang
2 tbsp honey
1 tsp minced garlic
1 tbsp sesame oil
Juice of half a lemon

To serve:
Chives, sesame seeds, sea salt

Method:

Boil the Jersey Royals in salted water for 15 minutes or until tender. Be careful not to overcook them as they’re delicate and need to hold their shape.

Drain and let them cool completely on a kitchen towel.

Once cooled, place on a baking tray and gently smash each one with a glass.

Mix together the gochujang, honey, garlic, sesame oil and lemon juice. Spoon a little glaze onto each potato and spread to coat.

Roast at 200°C for 10 to 15 minutes until crispy and slightly charred.

Finish with a sprinkle of sea salt, chives and sesame seeds.
