Recipe: (Serves 4) For the wild garlic butter: 1 Large handful (about 80-100g) wild garlic, washed

Ingredients:
700g Jersey Royal potatoes
2 x tbsp olive oil
5 x large cloves of garlic (crushed)
1 x fresh chilli (seeds optional depending on spice tolerance)
2 x tsps smoked paprika
1/2 lemon
10g fresh coriander leafs (diced)
Salt to taste
* Diced the potatoes into small cubes
* Boil in salted water for 6 minutes to soften
* Drain and add them to a baking tray
* Drizzle with a little olive oil and salt
* Pop in a preheated oven at 200•c for 30 mins turning halfway. (or until crispy)
* When the potatoes are a couple minutes off being done add the 2 tablespoons of olive oil to a frying pan and heat gently
* Add the garlic and chilli and fry for 2 mins
* Then add the smoked paprika and fry for a further minute
* Add in the fresh coriander then fry for 30 secs and add in the crispy potatoes
* Combine well so all the potatoes are coated in that delicious seasoning
* Finish with a healthy squeeze of lemon and season with salt to taste!
