Recipe: (Serves 4) For the wild garlic butter: 1 Large handful (about 80-100g) wild garlic, washed
Ingredients:
Jersey Royals Pizza
2 tbsp butter
2 tbsp plain flour
1 cup of milk
salt and pepper to taste
6-8 cloves of garlic
2-3 rosemary sprigs
mozzarella
1 large shallot
thyme
chilli flakes
4-5 Jersey Royal potatoes
chives
honey
Method:
1. Make the white sauce for the base of your pizza first by
melting your butter in a pan. Add the flour and milk to
make a roux. Once all the lumps are out, add the sprigs
of rosemary, salt & pepper to taste and finely minced
garlic. Cook for a few minutes until desired sauce
consistency is achieved.
2. Roll out your pizza dough and pop into the oven
(according to package instructions) for about 3 minutes
to give the base a chance to cook before you add your
toppings.
3. Once the white sauce is cool, spread onto the pizza
base and top with mozzarella, finely mandolined Jersey
Royal Potatoes and shallots. Put back into the oven
until the pizza is fully cooked and the potatoes are
golden.
4. Sprinkle over lots of thyme, chives, chilli flakes and
drizzle over honey. Enjoy while hot!
