Recipe: (Serves 4) For the wild garlic butter: 1 Large handful (about 80-100g) wild garlic, washed
Nduja Butter Smashed Jersey Royals by Hannah Hall

Ingredients:
– 30g Nduja
– 45g Butter
– 2 – 3 tbsp olive oil
– 1 bag of Jersey Royals
– Salt & pepper
Method:
- Coat your Jersey Royals in olive oil, salt & pepper and bake in a preheated oven for 45 mins at 180, turning occasionally.
- Meanwhile, fry your nduja for a couple of mins on a medium heat, then mix into your butter and pop in the fridge to chill while your potatoes roast.
- After the 45mins, squash each Jersey Royal with a fork gently then return to the oven for a further 20 mins.
- After the 20 mins is up, top your potatoes with a small spoonful of the chilled nduja butter and pop back in the oven for 5 mins – serve immediately!
If you don’t like it too spicy, serve with sour cream to cool slightly!
