Lemon & Caper Prawns with Jersey Royals by feelingtastyy

Serves 2 as a main or 4 as a starter
Ingredients:
600g Jersey Royal potatoes
Drizzle of olive oil
8 Large king prawns, shelled with the head left on
50g Butter
3 Garlic cloves, finely sliced
2 Red chillis, finely sliced
2 tbsp Capers
Plenty of cracked black pepper
1 Lemon, zest and juice
90g Samphire
Small bunch of fresh parsley, finely chopped
Method:
1.Clean potatoes and add to a pan with cold salted water, bring to a boil and cook for about 15 minutes until fork tender, drain and slice in half lengthways.
2.Whilst the potatoes are boiling, add the olive oil to a large frying pan over a medium-high heat and gently lay down your prawns. Sear for a couple of minutes before flipping over and adding in the butter, garlic, chilli and capers. Toss until evenly combined and cook for a couple more minutes until fragrant before stirring through the pepper and juice of the lemon.
3.Next, add the cooked potatoes to the pan alongside the samphire and toss until everything is evenly coated in the butter sauce.
4.Remove from heat and serve up with lemon zest and fresh parsley. Dig in and enjoy!
