Smashed Jersey Royals topped with smoked salmon and fresh greens by sebscrispyclub

Ingredients:
500g Jersey Royal new potatoes
1 handful sugar snap peas
2 eggs
50g butter
5 radishes
2 fillets hot smoked salmon
Pickled red onions
Fresh herbs like chives and dill
Method:
- Wash the potatoes using either my grandmother’s method (bucket + broomstick) or just clean in a bowl of water.
- Set a pot of water to boil. Add the potatoes, season with salt and boil for about 15 minutes or until tender. Smaller ones might need less, larger ones need longer. Fish out the potatoes and set aside. Throw in the sugar snap peas and boil for 30 seconds before transferring to cold water. Using the same pot, boil the eggs for 6.5 minutes.
- Melt the butter in a small pot. Continue cooking on low heat until the butter starts to turn golden brown. You’ll know it’s done when it smells nutty. Be careful not to burn it!
- Thinly slice the radishes and mince your herbs. Peel and cut the eggs in half.
- Add the potatoes to a large plate. Smash them with a fork. Tear the salmon into large flakes and scatter all over. Add the sugar snap peas, eggs halves, radishes, red onions and herbs. Season with flaky sea salt and pepper. Finish by pouring over the browned butter!
