Jersey Royal Potatoes with Crispy Garlic, Crushed Pepper, Chilli & Spring Onion (Chilli Oil Potatoes):

Ingredients:

500g Jersey Royal Potatoes

For the Crispy Garlic & Chilli Oil

1 head of garlic, cloves peeled and sliced

1 tbsp black peppercorns toasted

1 tsp chilli flakes

½ tsp flaky sea salt

250ml vegetable oil

To serve:

Finely sliced spring onion, coriander leaves

Method:

Heat the oil in a small saucepan on medium low and add the garlic.

In the meantime, lightly crush the pepper in a pestle and mortar, add the pepper, chilli and salt to a heatproof bowl.

When the garlic turns golden, place a sieve over the bowl and pour the oil out over the pepper mixture. Set the garlic aside to cool.

Boil a large pot of water and add the Jersey Royal Potatoes cooking for 10-12 minutes until tender – drain.

Place the potatoes in a bowl and drizzle oil on top, top with crispy garlic and top with spring onion and coriander.
