Roasted Jersey Royal potatoes with a whipped feta base and scallion oil by thatfoodiejess

Crispy roasted Jersey Royal potatoes served over a whipped feta base and scallion oil:

Ingredients:
700g Jersey Royal Potatoes
Whole head of garlic with top cut off
1 tbsp neutral oil, heated
1 tsp salt
¼ tsp black pepper
½ tsp paprika

Whipped feta:
200g Feta
115g Greek yogurt
1 tsp Lemon juice (adjust to taste)
1 tbsp Olive oil
Pinch Salt
¼ tsp black pepper
Roasted garlic
Cloves

Hot honey:
2 tbsp honey
1 tsp chilli flakes
½ tsp hot sauce

Ginger scallion oil:
3 spring onions, minced finely
½ inch ginger, minced finely
4 tbsp hot oil
½ tsp salt
½ tsp sesame oil

Toppings:
Sliced red chillies
Chives, minced

Method:
1.Preheat the oven to 200 Celsius
2.First wash your Jersey Royal potatoes and slice into two
3.In a pot of salted boiling water, add the chopped potatoes and boil for 10 minutes or until fork tender
4. Drain and let them sit for around 40 seconds before adding to a bowl with hot neutral oil, salt, black pepper and paprika. Then toss and fluff up the potatoes until you see a thick layer build up on the potatoes
5.Place the potatoes & garlic bulb wrapped in kitchen foil (top down) on the baking tray, spreading them out evenly and roast for 30-40 minutes, or until brown all over, making sure to turn after 20 minutes
6.While the potatoes are roasting, in a small bowl, add the minced spring onions and ginger and pour hot oil over them, then season with salt and sesame oil.
7.For the hot honey, in a small bowl mix together honey, chilli flakes and hot sauce. Mix until well combined and taste and adjust to your liking.
8.Once the potatoes are cooked, remove the roasted garlic bulb.
9.In a blender add the feta, greek yogurt, the roasted garlic cloves, lemon juice, olive oil, salt and pepper then blend until smooth. Taste and adjust to your liking.
10.Add some spoonfuls of the whipped feta onto a plate followed by a drizzle of hot honey, then the crispy roast potatoes and top with the fragrant scallion oil, more hot honey, chives and red chilies and enjoy!
