Crushed Jersey Royals with Gremolata (Serves 2): Ingredients: 250g Jersey Royals Salt Olive Oil Gremolata: 1

Serves 3
Bowl Ingredients:
750g Jersey Royals
Pinch of chilli flakes
45g Kalamata olives, halved
Small handful of dill, chopped
1.5tbsp extra virgin olive oil
650g chicken mini fillets
1 large red pepper, cubed
1 medium courgette, sliced
1 medium red onion, cubed
1 tsp ground cumin
2tsp smoked paprika
2tsp garlic granules
2tsp mixed herbs
Salt & black pepper to taste
Few sprays of olive oil
Dressing Ingredients:
90g 0% Greek yogurt
Half a lemon, juiced
Juices from the cooked chicken & veg
1tsp dried parsley
1tsp minced garlic
Salt & black pepper to taste
Method:
1. Cut the Jersey Royals in half, leaving the skin on, and boil in salted water for 15 mins or till soft
2. Mix the smoked paprika, cumin, garlic granules & mixed herbs in a small bowl, add the chicken mini fillets & chopped veg to an air fryer tray, with the seasoning on top & salt and pepper to taste
3. Spray with a little olive oil & toss to coat. Air fry for 15-20mins on 180C till cooked
4. Drain the boiled Jersey Royals & set aside to fully cool
5. Once the chicken is cooked, mix any leftover juices with the dressing ingredients listed above & evenly split between three small jars
6. Add the cooled Jersey Royals to a large bowl & toss with the olives, chopped dill, chilli flakes & olive oil
7. Portion out the Mediterranean chicken & veg and Jersey Royals into 3 large bowls, cover with an airtight lid & store it all in the fridge with for 3-4 days
8. When ready to eat, microwave to reheat & top with the yogurt dressing to serve!
