Michel Roux’s Crushed Jersey Royals with Gremolata

Crushed Jersey Royals with Gremolata (Serves 2):
Ingredients:
250g Jersey Royals
Salt
Olive Oil
Gremolata:
1 clove Garlic
1 tbsp Chopped Flat Leaf Parsley
1 Lemon
1 tbsp Olive Oil
Salt & Pepper
Method:
Pre heat oven to 190 C
Wash potatoes and cook in salted water for approximately 8-10 minutes until just tender but not fully cooked.
Drain and leave to steam off for 5 minutes.
Spread on a parchment lined baking tray and using a glass or small bowl carefully press each potato to flatten.
Drizzle with olive oil to evenly coat and place in oven for approximately 18 minutes.
Mix parsley, finely grated garlic, zest of a lemon and the juice of half the lemon in a bowl. Season with salt and pepper and mix in olive oil.
Once the potatoes are golden and crispy remove from the oven and place in a serving dish, spoon over gremolata and serve alone or with grilled chicken.
