Miso & Brown Butter Jersey Royals​

Ingredients​:
– 1kg Jersey Royals, skin on and washed​
– 1½ tsp sea salt​
– 80g unsalted vegan butter​
– 1½ tbsp white miso paste​
– 1 tsp maple syrup​
– Zest and juice of 1 lime​
– 2 spring onions, finely sliced​
– 1 red chilli, finely chopped​
– 1 tbsp toasted sesame seeds​

Method​:
1. Place the Jersey Royals into a pan of cold salted water. Bring to the boil and simmer for 15 to 20 minutes until tender but still holding their shape. Drain and allow them to steam dry for a few minutes.​
2. In a separate pan melt the butter over a medium heat. Let it foam and turn golden brown with a nutty aroma. Lower the heat and stir in the miso paste, maple syrup, lime zest and lime juice until smooth and glossy.​
3. Add the warm Jersey Royals to the pan and gently toss to coat them in the glaze, keeping them whole. Let them sit in the sauce for a minute so they absorb the flavour.​
4. Transfer to a plate and finish with sliced spring onions, chopped red chilli, toasted sesame seeds. Finish with a squeeze of lime and serve immediately.​
